The 2020 Châteauneuf Du Pape Cuvée Chaupin is mostly Grenache sourced from the northern part of the appellation (a small part comes from La Crau), and it was 70% destemmed and brought up in foudre and tank. A deeply hued barrel sample, it offers lots of cassis and pure black raspberry fruits, medium to full body, incredible purity, great tannins, and a blockbuster finish. This is another regal, flawlessly put together Grenache from this talented team.

Cour de Récré from Domaine François Villard is an elegant, fresh and fruity white Crozes-Hermitage. The wine is made from 90 % Marsanne- and 10% Rousanne grapes grown in Mercurol.The grapes are pressed directly after harvest and the fermentation is done in large oak barrels (foudres) at low temperature and with natural yeast. The malolactic fermentation is partially stopped. The storage is done with the lees for 9 months in large oak barrels (foudres).

Les Contours de Mairlant by François Villard is a full-bodied wine with a lovely richness, enhanced, as always with Villard , by this tension which contrasts with the characteristics of the two grape varieties... Lovely notes of flowers but also white fruits, a beautiful balance, what can I say except that we are won over.
This white wine was aged for 11 months in barrels and tuns on lees, which gives it the richness and generosity that we love so much.

Thời điểm quyết định chất lượng: Nho được thu hoạch khi đạt độ chín tối ưu, đảm bảo hài hòa giữa độ đường, độ chua và hương thơm. Có thể thu hoạch bằng tay (tinh tế, chọn lọc) hoặc bằng máy (nhanh, quy mô lớn)
Rượu vang đỏ: Nho được tách cuống và nghiền nhẹ, giữ cả vỏ để lên men cùng nước nho – tạo màu sắc và tannin đặc trưng. Rượu vang trắng: Nho thường được ép ngay lập tức, tách vỏ để giữ độ trong và tươi mát.
Quá trình men (tự nhiên hoặc bổ sung) biến đường thành cồn và CO₂. Vang đỏ: Lên men cùng vỏ từ 7–14 ngày ở 22–28°C. Vang trắng: Lên men không vỏ, ở nhiệt độ thấp hơn (12–18°C) để giữ hương thơm tinh tế. Có thể tiến hành lên men malolactic để làm mềm vị chua (thường áp dụng với vang đỏ).
Sau quá trình lên men, dịch rượu được tách khỏi phần xác nho, chuyển sang thùng chứa mới. Rượu vang đỏ: Ép sau lên men. Rượu vang trắng: Ép trước khi lên men
